1 wholemeal wrap
Tomato purée
Garlic chopped
Lots of veggies
Extra strong cheddar cheese full fat (grated)

Loaded baked sweet potato

Loaded baked sweet potato
Recipe:
INGREDIENTS:
1 medium sweet potato
2tbsp basil pesto
½ cup drained chickpeas
1 small ripe avocado
2 cloves of garlic
Handful of fresh black olives
Cress to top
Glug of olive oil
METHOD
Preheat the oven to 200°c. Drizzle the sweet potato in a little olive oil and sprinkle on salt to help the skin go crispy
Bake for 35-40 mins
Whilst the potato is baking place the ½ cup of chickpeas on a baking tray and coat in ½ the pesto, add a little more olive oil to prevent sticking to the tray & add to the oven 10 mins later then the potato
Prepare your avocado & olives ready to assemble.
Once the potato and chickpeas are cooked, cut open the sweet potato, drizzle the remaining pesto inside, add the crunchy chickpeas and load it up with the rest of ingredients! Enjoy!

Coconut Chocolate Ice Cream
Serves 2-3
Recipe:
8 frozen bananas
2/3 cup of raw cacao
½ cup of desiccated coconut
1/3 cup of coconut cream or milk
Pinch of sea salt
Extra coconut for toppings
1. In a food processor or high speed blender mix all the ingredients until it becomes soft-serve-like.
2. Place the soft ice-cream in a cake tin in the freezer for 1 hour.
3. Take out, make scoops and enjoy! #suddenlyslim

clean banana bread

3 cups of almond/rice/coconut/buckwheat flour
2 large ripe bananas
2 large eggs
1/4 cup coconut oil
4 tbs honey
1 tsp vanilla extract
1 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup chopped walnuts (Optional)
1/4 cup raisins (Optional)

Preheat oven to 180 degrees. Combine all ingredients in a large bowl and mix well. Pour batter into a mini loaf pan. Bake for 55-60 minutes until loaf is cooked all the way through.
